A bacon topped beef and pork meatloaf that is enriched with a sweet red pepper onion relish souse served with home-style creamy potatoes.

Recipe

1-pound ground beefPhotobucket
1-pound ground pork
4 slices of wheat bread
1 cup of milk
2 sweet red bell peppers
½ sweet white onions
½ red onion
4 cloves of garlic
1 Egg
½ cup of sour-cream
Hand full of chopped parsley
Two teaspoons of thyme
1 bay leaf
1-cup olive oil
1-cup ketchup
¼ cup Worcestershire souse
2 tablespoons of salt
2 tablespoons of garlic salt
1 tablespoon of Jamaica Me Crazy pepper mix


Get your cook on:
-In a heated souse pan start up equal pars of butter and olive oil.
-Add chopped onions, red bell peppers, and garlic. With the addition of a bay leaf and thyme, allow the vegetables time to caramelize.
-Soak de-crusted wheat bread in a separate bowl of milk. (Add later with meat)
-Add ketchup, Worcestershire souse, Jamaica Me Crazy, salt and pepper to vegetables to form a relish.
-With boiled potatoes mash in milk, sour cream, butter, salt and pepper.
-Hand-mix the soaked bread in with the beef and pork.
-Hand-mix ½ the relish into the meat.
-On an oiled cookie pan form a loaf with the meat mixture.
-On the top of the meatloaf, equally spread the out ½ of the remaining relish.
- Layer bacon strips across the top.
-Cook in an oven at 375 degrees for around 45 minutes and allow time for the bacon to crisp.
